The first level that means something
HSK 3 is widely treated as the point at which a learner is independently functional, and it is the lowest level that appears on job listings with any regularity. It is also where the test stops providing pinyin, so character recognition becomes a hard requirement rather than a good habit.
Doubling gets harder from here
Each HSK level roughly doubles the one before, but the words being added are progressively less frequent, so each doubling buys less comprehension than the last. Going from 300 to 600 words is a large practical gain; going from 2,500 to 5,000 at level 6 is a much smaller one per word learned. This is the ordinary shape of vocabulary acquisition and worth expecting rather than being discouraged by.
