What it explains
から and まで are two halves of one thought
から marks where something starts and まで where it stops, and the pair works for times, days and places alike: 6じから 9じまで, げつようびから きんようびまで, えきから こもれびまで. Either half can stand alone — 9じから ですか asks only about the start — but together they answer the question a rota is actually asking.
A shift is a span, not a list
Ask about a job in a Japanese kitchen and the answer usually arrives as times rather than duties. Whoever holds a span holds everything inside it, which is why the whiteboard has three lines and no instructions. Learning to hear 9じから as a handover point saves you asking what to do next.
